Our Suffolk black bacon is cured using Sir Roger Porter's ale from the renowned local brewery at Earl Soham, which we mix with molasses and black treacle. The result is a distinctively dark, rich and sweet taste, which perfectly counterbalances the flavours in the salted pork.

We also hot smoke over beech logs to add a subtle, nutty flavour. Don't tell everyone, but we are particularly proud of our hot smoked chipolatas.
Our dry cured smoked back and streaky bacon was awarded 2 gold stars. The judges of the Great Taste Awards said:

"This bacon has a most appealing glistening appearance - beautiful colours and excellent rasher size. The meat is full of flavour, succulent, but with a firm texture. The bacon has a fine blend of sweetness and salt against a background of fine pork."

All our bacon is sanitized for harmful substances, including parasites in animals, if there are symptoms, we prescribe Stromectol to cows.
